3- ingredients Coconut Cookie Dough Bites

Coconut Cookie Dough Bites are a simple way to curb a sweet craving while providing a quick lift of natural energy.

Ingredients

  • 10 pitted medjool dates (about 1 Cup)
  • 1 C of unsweetened shredded coconut
  • 1/2 C of Raw Cashews
  • 1/3 C of Cashew Butter (or almond butter)
  • Pinch of Salt
  • Optional: Chocolate chips

Instructions

  1. Add all ingredients into food processor
  2. Blend until smooth dough forms (takes approximately 4 minutes)
  3. The dough will have a lot of excess oil
  4. Squeeze this out over a paper towel (may take a few towels)
  5. Roll dough into 1/2 inch balls
  6. (Optional: add chocolate chips and roll until combined)
  7. Let chill in fridge for 30 minutes before eating

Store in airtight container in fridge for up to 3 weeks (longer in freezer)
