Chocolate Chip Banana Bread Blondies

With a single bowl, just six ingredients, and under 30 minutes, you can have these chocolate chip banana bread blondies ready to enjoy. They’re gluten free, wonderfully moist, and genuinely delicious.

Ingredients

  • 2 Ripe Bananas
  • 1 Egg (if vegan replace with flax egg)
  • ⅓ Cup of Smooth Natural Peanut Butter
  • ¼ Cup of Coconut Oil, melted
  • 2 Cups of Oat Flour
  • 1 Cup of Chocolate Chips (I used enjoy life)

Instructions

  1. Preheat oven to 350ºF
  2. In a medium size bowl, mash together 2 ripe bananas
  3. Add egg, peanut butter, melted coconut oil and mix until well combined
  4. Slowly stir in oat flour
  5. Add chocolate chips and combine into batter
  6. Pour batter into a greased 8″ baking pan
  7. Bake for 20 minutes
  8. Allow to cool and slice into 16 squares
