Chia seeds are a powerful superfood and paired with coconut milk make an unstoppable pudding packed with protein and healthy fat. Enjoy it for breakfast, dessert or as a snack.

Ingredients

  • 3 tbsp of chia seeds
  • 1 tsp of cinnamon
  • 2 tbsp of unsweetened shredded coconut
  • 1 cup of coconut milk or coconut Bai 5
  • 1 tbsp of maple syrup (omit if using Bai 5)
  • ½ tsp of vanilla extract
  • Optional: Fresh berries for garnish

Instructions

  1. In a mason jar combine chia seeds, coconut and cinnamon and mix together. Pour in coconut milk (or Bai) maple syrup and vanilla extract. Mix well until fully combined. Place in fridge and let sit for at least 3 hours or overnight.
  2. Scoop mixture into two serving bowl and garnish with berries or your favorite toppings
