Cranberry Steel Cut Oats

Take advantage of your leftover cranberry sauce and make these seasonally flavored steel cut oats. They’re the perfect breakfast to make ahead and enjoy all week.

Ingredients

  1. 1 Cup of Steel Cut Oats
  2. 2 Cups of Almond Milk
  3. 2 Cups of Water
  4. 1 tsp of cinnamon
  5. 1 tsp of vanilla
  6. ½ tsp of ginger
  7. ½ tsp of pumpkin spice
  8. ½ cup of Cranberry Sauce (link below)
  9. Optional: 8 pieces of Candied Ginger for topping

Instructions

  1. Mix almond milk, water and spices in a medium sauce pan
  2. Stir in steel cut oats
  3. Cook on medium heat until liquid is completely absorbed (approximately 40 minutes)
  4. Serve in a bowl and stir in cranberry sauce
  5. Garnish with candied ginger
