Crunchy Cilantro Salad over Farro Grains

This hearty salad is packed with crunch and flavor. Farro adds another layer of texture, flavor and filling power while the cilantro adds that perfect zing.

Ingredients

  • 1 Cup of Cooked Farro Grains
  • 1 Chopped Red Bell Pepper
  • 1 Cup of Shredded Carrots
  • 1½ Cups of Shaved Brussels Sprouts
  • ½ Cup of Sunflower Seeds
  • 2 Tbsp of Chopped Cilantro

Instructions

  1. Cook 1 cup of farro grains according to package instructions, when cooked pour into medium sized mixing bowl
  2. Chop red bell pepper and and toss into bowl
  3. Add pepper, shredded carrots, brussels sprouts, sunflower seeds and cilantro into bowl and mix until well combined
  4. Serve with your favorite dressing or olive oil and salt and pepper
