Morning Glory Muffin Oatmeal

This familiar muffin flavor is reimagined as a wholesome, comforting oatmeal.. The sweet and savory mixture of carrots, pecans and raisins make for an irresistible breakfast.

Ingredients

  • 1 Cup of Oats
  • 1 Cup of Almond Milk
  • 1 Cup of Water
  • 1 Tbsp of Almond Butter
  • 1 Cup of Grated Carrots
  • 1 tsp of Cinnamon
  • ½ tsp of Ground Ginger
  • ½ tsp of Pumpkin Spice
  • ⅓ Cup of Raisins
  • ½ Cup of Unsweetened Shredded Coconut
  • 1 tsp of Vanilla Extract
  • 1 Tbsp of Maple Syrup
  • ¼ Cup of Pecans

Instructions

  1. Combine almond milk and water in a medium sauce pan and boil
  2. Add cup of oats, carrots, almond butter, raisins, vanilla extract, cinnamon, ginger, pumpkin spice
  3. Cook for 20 minutes
  4. Divide into three bowls and top with coconut, maple syrup and pecans
