Pumpkin Spice Energy Bites

Looking for an easy, healthy on-the-go snack? These Lara Bar inspired energy bites are perfect for busy days or lazy days. Freeze ’em or heat them up for dessert!

Ingredients

  • 1½ Cups of Dates
  • 1½ Cups of Oats (GF Certified if you’re GF)
  • ½ (15 oz) Can of Pumpkin
  • ½ Cup of Peanut Butter (or any Nut/Seed Butter)
  • ½ Cup of Shredded Coconut
  • 2 TBSP Cinnamon
  • 2 tsp Nutmeg
  • 2 tsp Powdered Ginger

Instructions

  1. Place all ingredients into food processor and blend until smooth
  2. Roll dough into small round balls – makes approximately 20
  3. Let chill in fridge for +2 hrs. – or just eat the dough right away!
  4. Wrap individually with plastic wrap or in plastic bags to store
