Smoked Salmon and Avocado Tacos

  • 4 corn tortillas
  • 4 oz of smoked salmon
  • 1 avocado
  • 2 oz of goat’s cheese
  • 2 cups of arugula
  • 1 tbsp of olive oil

Instructions

  1. Warm the tortillas either in the oven (250ºF for 5 minutes) or microwave (for 30 seconds)
  2. Slice avocado
  3. Divide smoked salmon, avocado, goat cheese and arugula into 4 tortillas
  4. Drizzle with olive oil and season with salt and pepper
