I think there’s a bit of a misconception that healthy food bloggers eat fancy gourmet meals every day. At least that’s what I pictured a food blogger’s life was like… until I started blogging about food.

Now maybe I’m the odd one out here, but because I have a 9-5 job, a big chunk of my nights and weekends are dedicated to this blog. That also means by the time I’m done cooking, shooting, doing dishes, then more dishes then somehow even more dishes on a Sunday night I’m pretty much tapped out in the kitchen for at least the next 5 days.
Week days I’m on my tupperwear grind, eating leftovers and quick, fuss-free veggie-packed meals. While it does require some planning, a little extra prep on Sunday, I really enjoy eating this way because I don’t have to fuss and fret throughout the week.
I also rely a lot on what I call “lazy girl meals.” These are recipe-free, easy, healthy and tasty and almost always take less than 20 minutes


A couple of my favorites include:
Big ass salads
Pack a bowl of lettuce with veggies, seeds, nuts, avocado and drizzle with olive oil or tahini, salt & pepper
Zoodles with Pesto & Eggs
Loaded Sweet Potatoes
Cook a sweet potato (4 mins in the microwave) and stuff it with veggies, tahini or if you’re craving sweet some nut butter and cinnamon
Grains n’ Veg
I’ll do some farro, quinoa or lately I’ve been loving Banza chickpea pasta and load it with equal (if not more) amounts of veggies and use pesto, tahini or red sauce
But lately I’ve been obsessed with making healthy toasts. Now I know what you’re thinking, “toast for dinner?” But hear me out.
Forget toast as a side to a scrambled egg at breakfast, and instead consider it instead an epic toppings vehicle. Once you’re in the toast mindset, you’ll start seeing creation possibilities everywhere you go.

Savory


Avocado & Pepita
Avocado toast might be old news to many, but it’s still so damn good. The key for me is adding a pinch of salt, trader joe’s does a great garlic salt mix, then topping with pepitas for the extra crunch.
Hummus & Hemp Seed
Aside from being a fantastic alliteration, hummus and hemp seed is a fantastic combo. If you want to get fancy, then try some jazzy hummuses like roasted red pepper or garlic.
Sweet


Chocolate Peanut Butter, Banana & Coconut
Peanut butter, chocolate and banana are probably the hottest threesome around. Ok, did that get inappropriate? #SorrynotSorry Oh and the shaved coconut? Icing on the cake…. or like coconut on the toast.
Blackberry Ricotta Honey
Ok, so this one is my personal favorite! Ricotta has recently re-entered my life and I’m left here wondering how I could have ignored it for so long. I highly recommend getting the whole milk ricotta because go whole or go home! Blackberry and honey just takes it to a whole other level.
