I wish I could tell you that cooking an exciting new dish was the first thing I wanted to do after coming home from a long day of work, but that would be 0% true. While I love playing in the kitchen, it’s not something I can do when I’m tired or hungry. My patience threshold is ruuul low after 7pm. When it comes to cooking elaborate weeknight meals my thoughts are: “Ain’t nobody got time fo that.”
In fact, most days when I get home I have to grab a snack ASAP before I proceed to devour the entire fridge. Hungry Georgie is not a pretty sight at all.

So when it comes to dinner I’m a simple gal. But simple doesn’t have to be boring or unhealthy. There are so many creative, satisfying meals you can make with a handful of fresh ingredients and less than 30 minutes. Which happens to be the threshold on the amount of time and effort I’ve got.
One of my favorite brands when it come to veggie proteins is Gardein. If you’ve been following the blog for a while you’ve probably seen me talk about Gardein before. Like when I made zoodles and meatless-balls, or these chicken-less pesto dippers, or the meatless thanksgiving meal. In fact, I usually have the Gardein chicken-less strips at least once a week over a salad bowl.


Today I’m sharing a way to use Gardein’s Black Bean Burger outside the bun. I’m a huge fan of veggie burgers. I love ‘em homemade but I’m real picky when it comes to the ones I buy. There’s probably only 2 or 3 brands I really love and Gardein is one of them. Right now Gardein is offering a rad coupon for $1 off any of their products (wut wut)
My favorites are the meatless meatballs, the chick’n strips, these veggie burgers and the chick’n crispy tenders.
While I love the classic veggie burger on a toasted oatmeal bun (from Something Natural yaaas) I thought it would be fun to shake things up a little and use these bad boys in a spicy salad. This bad boy has all the southwest flavors you crave from a good burrito bowl plus a healthy boost of vitamins from the kale and vegetarian protein from the veggie burger. All together this dinner takes about 20 minutes to put together so no fear, by the time the the frantic hunger rage settles in you’ll already be chowing down on this epic southwestern style feast.

Ingredients
- 3 Cups of Fresh Kale, Chopped
- 1 Tbsp of Olive Oil
- 1 Gardein Blackbean Burger
- ¼ Cup of Chunky Fresh Salsa
- 2 Tbsp of Shredded Cheddar Cheese
Instructions
- Wash and chop kale, massage with 1 tbsp of olive oil
- Defrost black bean burger in microwave for 1 minute and 30 seconds
- Sautee kale for 3-5 minutes
- In a toaster oven or oven toast black bean burger for 8 minutes on 350ºF
- Slice veggie burger into 8 small slices (think pizza shapes)
- In a large bowl mix together sauteed kale, salsa, shredded cheddar cheese, black bean burger and enjoy
