I totally understand that everyone has different food preferences. Totally cool. I get that people love meat. That makes sense. I’m just not one of those people. I also like food that my boss calls “bird food” and that’s cool. I could drown in coffee and I know that’s not everyone’s cup of tea, ok, maybe wrong idiom to use, but you get it. We have a right to our individual taste buds.

Maybe that’s one of the most wonderful things about food. Taste is subjective. If everyone liked the same thing wouldn’t that be boring. Plus, tastes change. I used to be the pickiest eater, I liked pasta and cheese. End of list. But now I’m a voracious veggiesaurus (who also enjoys ice cream… and cookies).

However, the one thing I will judge you on, is whether you like avocados. I’ve always thought you can’t truly trust someone who doesn’t love a good ‘ol slab of green goodness. Ok, maybe that’s extreme, but so is my avocado love.

But avocados. They’re just magical. You might have caught on to my love… maybe because my logo is now an avocado. That’s dedication. And you know what I think makes them even more of a vegetable unicorn? Their insanely short window of perfection. I work really hard to pick the perfect 3 avocados every week but somehow I can never time it right. They all get ripe at the same time and I just can’t eat them fast enough, but when I only buy two I want more #AvocadoStruggles.


Ok so why am I telling you all this? Well I had a perfectly beautifully ripe avocado that had like a minute left of being ripe and I didn’t know how I could use it all… until I remembered seeing something about pureeing avocados to make a pudding. After a little experimentation I finally crafted the perfect ratio of chocolate to sweetness to creaminess. It’s got bold chocolate flavor that’s enhanced by the addition of chocolate chips. My favorites are the chocolate chunks from Trader Joe’s. Seriously the best shape/flavor.

Unfortunately, like any avocado based dish this gem is only perfect for about a day. It just means you’ll be making a new best friend with whoever you’re sharing this pudding with.

Ingredients
- Avocado
- 2 Tbsp of cocoa powder
- 2 Tbsp of maple syrup
- ½ tsp of cinnamon
- Optional Toppings: Chocolate Chips
- Graham
Instructions
- Place all ingredients (except for chocolate chips) in a food processor or high powered blender and blend until smooth
- Chill in fridge for 30 minutes
- Sprinkle chocolate chips on top and serve
- Tastes best eaten within the day
