Who doesn’t love cookie dough? My favorite part of baking is sneaking bites of the dough. My favorite cookies are crispy on the outside but gooey and chewy on the inside. If you’re in the NYC area you HAVE to go to Levain bakery. It was literally the best cookie of my life. Chocolate chip walnut. Insane.

However, the summer heat has totally killed any desire to turn on the oven. Not to mention, I haven’t had the chance to buy any baking supplies since moving to my new apartment. Every time I have a craving to bake I’m too lazy to buy anything.
Plus, I like to have a nutritious alternative for my (pretty regular) cookie dough cravings. These little bites are inspired by my favorite snack: larabars. Simple wholesome ingredients, fiber, healthy fats and no refined sugar.

These little guys are great for in between meals when you’re looking for a little something to take the edge of the hunger or as an after dinner snack. I store them in the freezer, but they still stay soft enough to eat. When you use nuts and dates as a base you can customize your energy bites for whatever mood you’re in. I love almonds, but cashews have a great texture and cookie dough taste. I used sunflower seeds to give a salty crunch and cinnamon for a flavorful boost.

No-Bake Snickerdoodle Bites
- Yield: 20 mini bites 1x
Ingredients
- 1/2 cup of slivered almonds
- 6 pitted medjool dates
- 1/2 cup of roasted sunflower seeds
- Small dish with cinnamon for rolling
Instructions
- Place almonds, dates and sunflower seeds in food processor.
- Blend until dough forms. Aprox 3-5 mins.
- You may have to stop processor and scrape sides.
- Roll dough into small balls around a 1 inch in diameter. (dough may be very warm)
- Put cinnamon in a small dish and coat lightly.
- Chill in the freezer for an hour before eating.
- Store in a sealed container in the freezer.

Other ideas:
You an add chocolate chips, coconut shavings, other nuts/seeds in place of sunflower seeds or oats.
