
During the week I’m running around campus from 8am to 9pm and healthy snacks are an absolute must. I depend on meal planning, prepping and lots of apples!
This week I decided not to spend $1.50 each on Larabars (which are my favorite energy/snack bars) because if they only have 5 ingredients why can’t I make them.
I kind of wing’ed it with the ratios and low and behold it worked!
Great thing about these little snackers is that you can mix it up for whatever mood you’re in. Add fruit, different nuts and maybe a little bit of chocolate if you want to have a bunch of flavors on hand.

Pumpkin Spice Energy Bites

Ingredients
- 1½ Cups of Dates
- 1½ Cups of Oats (GF Certified if you’re GF)
- ½ (15 oz) Can of Pumpkin
- ½ Cup of Peanut Butter (or any Nut/Seed Butter)
- ½ Cup of Shredded Coconut
- 2 TBSP Cinnamon
- 2 tsp Nutmeg
- 2 tsp Powdered Ginger
Instructions
- Place all ingredients into food processor and blend until smooth
- Roll dough into small round balls – makes approximately 20
- Let chill in fridge for +2 hrs. – or just eat the dough right away!
- Wrap individually with plastic wrap or in plastic bags to store
