As I sat down on this gorgeous Sunday afternoon to try and tell you about these blondies, these scrumptious, 1-bowl wonders. These moist, chocolatey, gluten-free glories, I couldn’t get out of my own damn head to figure out what to share with you (besides the recipe of course.)
For over 2 and a half years I’ve been sharing stories of this journey we’re all on to better health; focusing on simple, nutritious recipes, transitioning our mentality from fast-track short cuts to sustainable long run mindsets. However, I’ve rarely talked about another crucially important part of my (and your) diet.
Outside of the food and beverages we’re consuming every day, we also consume so so so so so (emphasis on the “so”) much content. Wake up, check Instagram, Facebook, SnapChat, our email. Throughout the day we’re checking, surfing, scrolling, viewing, consuming massive amounts of information. So much of it feels passive and unmemorable, but it’s truly incredible how huge of an impact this kind of content has on our well-being.
I don’t say this from a magical mountaintop looking down on ye lowly social media addicts. I say this as a full blown social media junkie myself. I say this as someone who until very recently fell asleep every night next to her laptop watching the same Netflix shows on repeat, while simultaneously checking Instagram at the same time.
But I can say now, looking back at the past 8 months, that changing my “content” diet actually dramatically changed the course of my life. (No, I’m not exaggerating.)



Back in August, out of curiosity for the platform, I started watching several Persicope videos from bloggers and business women. These women were business owners, leaders, entrepreneurs and really damn inspirational. Not only that, but they had magnetic personalities. Long story short, they led me down a rabbit hole of business Persicopes, podcasts and books that got me so inspired I started changing the way I felt, thought and acted. With all this new content I was consuming, I became less and less interested in watching the same 5 shows on Netflix over and over and instead started reading more.
It was around the same time, that I realized I didn’t want to stay in Boston or at my full-time job. The more I listened and read about business and became inspired by what these companies and individuals were sharing, I realized that this was where I wanted to take my life too.
Since slowly overhauling my content diet, I’ve quit my old job, registered my blog as a small business, moved, launched a brand new blog with my best friend and have no intention on slowing down any time soon.


While it certainly hasn’t been an overnight transformation, how I felt and behaved in the beginning of last summer is dramatically different from how I feel and behave right now. I’m measurably happier, more productive and I wake up every day excited at the direction my life is going in.
None of this would have happened if I hadn’t believed that I could have changed or had the knowledge and tools to help me do it. And I definitely attribute this shift to my content diet. Netflix is not my emotional pacifier anymore. I’m not saying I’ll never watch TV again, but seriously, when was the last time you watched a show that actually got you inspired to make a difference in your life or the life of someone you love?
Obviously listening or reading alone, won’t change your life. No one can do that but you. However, I really think you’ll be surprised by how much of an impact what you consume (not just food) impacts the way you feel about yourself and about the world around you.

- Cook Time: 20 minutes

Ingredients
- 2 Ripe Bananas
- 1 Egg (if vegan replace with flax egg)
- ⅓ Cup of Smooth Natural Peanut Butter
- ¼ Cup of Coconut Oil, melted
- 2 Cups of Oat Flour
- 1 Cup of Chocolate Chips (I used enjoy life)
Instructions
- Preheat oven to 350ºF
- In a medium size bowl, mash together 2 ripe bananas
- Add egg, peanut butter, melted coconut oil and mix until well combined
- Slowly stir in oat flour
- Add chocolate chips and combine into batter
- Pour batter into a greased 8″ baking pan
- Bake for 20 minutes
- Allow to cool and slice into 16 squares
