As I was putting together this recipe, I struggled with whether I wanted to call it a dessert or a breakfast. It packs a nutritional punch, it’s filling, it’s similar to oatmeal, but on the other hand it’s a pudding and it’s on the sweeter side. I realized I had a lot in common with this humble Coconut Chia Pudding.

First of all we’re both probably 60% coconut, but more importantly we both want to have it all. Who am I to try to put this chia pudding into a box. Dream big little pudding, dream big. You can be a dessert AND a breakfast if that’s what you want.

I really can relate to this little pudding. I too struggle with being extremely indecisive, like cripplingly indecisive. This comes into play in two different ways. The first of which, stems from what I like to call “I want it all” syndrome. I love lots of things. I love nature, I love cities, I love people, I love solitude, I love music, I love silence, I love running, I love lifting, there’s just so many amazing things to love it’s so hard to focus sometimes.

I feel that way with this blog. It’s one of my favorite creative outlets. I get to make food, take pictures of said food, practice my marketing #skillz, work on design, articulate my rambling thoughts and meet other like minded folk. Could it get better? But it’s hard to know how and where to focus. At times I feel like I’m all over the place. I want to hone and own my “voice” and my mission, but I still need to do a little more exploring (or is that an excuse?) See! Can’t make up my damn mind.

It gets even worse when I have to make decisions that affects myself AND other people. If you’re an indecisive person, like myself, the phrase “so what do you want to do tonight?” isn’t really a question, but an invitation for anxiety and often apologizing for being incapable of making up your mind. I’d rather do what other people want and risk not liking it, than have the opposite happen. Can’t decide if this is a good trait or not… #classsic

So cheers to all my indecisive peeps out there. This bressert pudding is for you. Spoon away at whatever time of day your little heart (and tummy) desires. I’d never judge you.

Coconut Chia Pudding

Ingredients
- 3 tbsp of chia seeds
- 1 tsp of cinnamon
- 2 tbsp of unsweetened shredded coconut
- 1 cup of coconut milk or coconut Bai 5
- 1 tbsp of maple syrup (omit if using Bai 5)
- ½ tsp of vanilla extract
- Optional: Fresh berries for garnish
Instructions
- In a mason jar combine chia seeds, coconut and cinnamon and mix together. Pour in coconut milk (or Bai) maple syrup and vanilla extract. Mix well until fully combined. Place in fridge and let sit for at least 3 hours or overnight.
- Scoop mixture into two serving bowl and garnish with berries or your favorite toppings
