Did you know I’m a fan of almond butter? Ok, so for those new to the blog this is probably an innocent question, but for those who are long time readers, or anyone who knows me, this question is a bit like asking if a Panda is a fan of bamboo (yeaaah, I just compared my self to a panda…). Moral of the story? Hellz yeah almond butter.

You could call me and almond butter are bffs (best food friends) – is that too far? Is it far enough? Maybe after you try one of these delectable almond butter cups you’ll understand my true feelings.

When it comes to candy, I’ve always loved reese’s cups. The miniature cups to be exact. Perfect peanut butter to chocolate ratio. But as I’ve gotten older and my tastes have gotten kinda douchey more mature, I’ll have one and think “meh, the chocolate could be darker and the peanut butter could be less sweet, is this even real peanut butter?” So occasionally I’ll splurge on Justin’s PB cups, but I thought why not DIY this thang!

Let me tell you a little about this recipe. When it comes to healthy candy making these guys are about as easy as it gets. The results? The perfect combo of rich dark chocolate and sweet roasted almonds. The hint of maple syrup is just enough sweetness without taking it overboard.

Another great part about this recipe? You probably have most of these things in your house already (so what are you waiting for?)

- Prep Time: 20 minutes
- Total Time: 20 minutes
Ingredients
- 1 Cup of Semi-Sweet Chocolate Chips
- 1 tsp of Coconut Oil
- 1 Cup of Almond Butter
- 2 tsp of Maple Syrup
- 20 mini cupcake liners
Instructions
- Pour chocolate chips & almond butter into two separate microwave safe bowls
- Add tsp of coconut oil to chocolate chips and microwave for 30 seconds, stir and repeat until liquid
- Add 2 tsp of maple syrup in bowl with almond butter – microwave for 30 seconds and stir until evenly combined.
- Place you mini cupcake liners on a large plate
- Carefully pour almond butter ⅓ way up into each liner
- You may need to lightly tap the liners to get the almond butter to settle evenly
- Top each almond butter cup with a dollop of chocolate (liners should be ⅔ full)
- Place plate full of almond butter cups in the freezer overnight until set
- Store in freezer – take out 5 minutes before eating
