It doesn’t take too long to figure out that In it 4 the Long Run has many nut lovin’ recipes. Whether in the form of balls, baked goods or straight up butter, I love a good nut. After many years of unhealthy food restrictions, I’m happy to report that I fully embrace healthy fats, especially nuts.


Avocados? Olive oil? Tahini? Salmon? 2% Greek yogurt? Coconut Oil? Can we all agree that fat makes things delicious? Not only that, but I’m always way more satisfied and can stay full much longer when I have a balance of fat and protein. Especially in the morning, if I don’t have enough fat or protein I’ll end up hungry snacking all morning, which can be super annoying.

Another source of healthy fat that’s totally underrated are seeds. If you read my weekly “What I Ate Wednesday” posts you’ve no doubt seen a sprinkling of seeds on almost all my salads or veggies. They add just the right amount of crunch and satiating factor to a meal.

I recently discovered this seed mix at Trader Joe’s and couldn’t wait to try it. It has buckwheat, millet, chia, flax, quinoa, hemp and amaranth seeds. Also, I want to take a step back and point this out for those who think I eat “rabbit food” or “bird food” you can totally laugh now. This bag of seeds totally looks like something you’d buy for a bird feeder. Whatever. To all my birds out there keep doin’ you, seeds are delicious.



I’ve already used the seeds on yogurt and smoothie bowls, but I had the revelation to make a super seed granola because of how much I love Purely Elizabeth Granola which contains most of those seeds. So if you’re a fan of that kind of crunchy crispy granola you’re going to LOVE this recipe. However I will warn you, this granola is really addicting. Aka I had it with breakfast and dessert… and some handfuls for snacks for 3 days in a row.

Extra Crunchy Super Seed Granola

- Total Time: 55 minutes

Ingredients
Dry
- 3 Cups of Oats
- 1 Cup of Slivered Almonds
- ½ Cup of Sunflower Seeds
- 1 Cup of Super Seed Mix (equal parts buckwheat, millet, chia, flax, quinoa, hemp and amaranth seeds)
Wet
- ⅓ Cup of Maple Syrup
- ½ Cup Oil
- ⅓ Cup of Almond Butter
Instructions
- Preheat oven to 325ºF
- In a large bowl mix together all dry ingredients
- Make sure coconut oil is liquid (head in microwave for 20-30 seconds and stir)
- In a small bowl mix together coconut oil, maple syrup and almond butter
- Slowly pour wet mixture into dry mixture combining until evenly coated
- Grease baking tray and pour oats onto tray
- Bake for 20 minutes take out and stir mixture and bake for another 20 minutes (40 total) or until golden brown.
